Ari and I have been making lots of yummy things with our plethora of basil! We made pesto a few times with:
1/4 cup of roasted pine nuts (We put them in the oven at 425 degrees for five minutes)
a couple of garlic cloves (I LOVE garlic!!)
2 cups of basil
2/3 cup of olive oil (I looove olive oil too!)
All of these ingredients we blended together
Then squeezed a little bit of lemon and sprinkled it with salt, pepper and LOTS of shredded parmesan cheese! (One of my favorite foods when I was in high school was simply olive oil, pasta and a ridiculous unfathomable amount of parmesan!)
We topped our linguine with our pesto and I was shocked that Ari loved it! I thought she would be grossed out by the color and how different it was but she asked for a second helping!
Ari and I also made a pizza! Nick and I had made mini caprese salads with our cherry tomatoes and basil a week earlier. We were left with 20 balls of fresh mozzarella. Nick didn’t want them to go to waste so Ari and I used it for our pizza. It turned out so good! We bought pizza dough from a local store called Distefano’s. We drizzled the dough with olive oil and sauce. Then topped it with as many mozzarella balls as we could (get rid of). On my side I put cut up spicy yellow peppers from our garden and pepperoni. I left Ari’s plain because she requested only cheese. We then tossed on some basil from our garden and sprinkled salt, pepper and oregano on it and baked it for 20 minutes at 400 degrees.
